Ingredients: 1 kg dried apricots, half a cup sultanas, 1 cup sugar, lO ground cloves, 1 cup boiled rice, half a cup shelled walnuts (coarsely ground), 2 grated carrots, 1 cup water.
Cook the apricots in water for five minutes. Mix the rice, sultanas, carrots, cloves and two tablespoons of sugar in a bowl. Knead together well, then add the walnuts. Roll into small balls the size of walnut shells and place one in each apricot. Arrange in a baking tray. Dissolve one cup of sugar in a cup of water and pour over. Bake for approximately 10 minutes until the syrup has thickened. Serve cold.
