Sugar 1 1/2 cups + 2 tablespoons 325 g
Water 6 cups 1 1/2 kg
Lemon rind 2 teaspoons 5 g
Mint leaves (fresh) 10-15 sprigs 10-15 g
Lemon 6 medium size 600 g


Dissolve sugar in water completely stirring occasionaly. Reserve 1 tablespoon. rub lemon rind and 6-8 mint leaves with reserved sugar until all flavor is extracted (or pound lemon rind, mint leaves and sugar in a porcelain mortar). Stir in sugar solution; strain. Squeeze leomns to get juice. Chill and serve in long glasses garnished with mint leaves.
