Regional Characteristics :

In old days, when canning and freezing were not in use, excess fruits were dried under the sun and stored for winter besides making preserves, jellies and marmalades, where people had orchards. Cooking dried fruit sugar and water is on old time practise. This practice is suprisingly and widely in use even today.
