Blend well. Whip cream and fold in. Spoon into cooled crust.
Begin chilling, meanwhile make topping.
- Topping:
- In medium bowl with wooden spoon beat sour cream, sugar and vanilla.
Spread topping onto filling with spatula. Continue chilling.
- Notes:
- This is my own recipe, it's soft and light with a high water content.
I think it's better described as a cream cheese pie than a cheesecake.
I like to top it with cherry pie filling. Make sure you chill it
well (preferably in the refrigerator over night) or you might find
it too soft (though I'm impatient and usually eat it anyway). The
name Chez Cake (pronounced shay cake) is an old joke.
Ed
and I used to eat at Carl's Jr. and their cash registers would print
CHEZCAKE because they only had room for eight characters. It
eventually became a running joke. "I think I'll have a shay cake!"
